Mike Sentell - Chef/Owner
Mike was born in Amarillo,TX and has lived in Austin since 1970. After graduating high school from New Mexico Military Institute in 1985, Mike attended Southwest Texas State University. Following his departure from Southwest he worked in the wholesale plant business and translated that experience to the freight brokerage business. Tired of the stressful constraints of the freight industry Mike began his culinary career in Austin with stints in some of the local restaurants including The Bitter End under Chef Emmett Fox. Mike left The Bitter End to take up pastry under Chef Tony Sansalone at the Four Seasons Hotel Austin. After over 11 years with the Four Seasons, Mike has undertaken a new challenge to open Sentelli's Fine Pastries and Specialty Cakes.
Shawn Bonifay - Pastry Chef
Shawn was born in Daytona Beach, FL. As many great chefs do, Shawn started as a steward at the Marriott Hotel, which soon became the Adams Mark. Starting as a cook in the savory side of the kitchen, he quickly made the rounds through all the cook positions in the kitchen. After 7 years cooking Shawn decided to give pastry and baking a try and hasn't looked back since. After working with Pastry Chef Michael Gonzalez at the Adams Mark for 2 years, he picked up and moved to his adopted state of Texas. Once arriving in Texas Shawn spent 7 years with the Four Seasons Austin, where he and Mike first met. Leaving Four Seasons, Shawn took a position as Assistant Pastry Chef under Pastry Chef Tony Sansalone at Austin's historic Driskill Hotel, where he honed his passion for pastry to a fine edge. Now Chefs Shawn and Mike have teamed once again to bring an elegant taste of pastry to Austin at Sentelli's Fine Pastries and Specialty Cakes.
